Easiest Dessert Ever

I love having a dessert to snack on after dinner.

I also like being able to bring goodies to my family when we come to visit for the holidays.

This is the perfect recipe for all the above, and it's super easy.

If I can do it, you can do it. promise.

 Behold---Crockpot Candy

1 jar (16 oz) dry roasted, unsalted peanuts
1 jar (16 oz) dry roasted salted peanuts
1 pkg (12 oz) semi-sweet chocolate chips
4 oz sweetened german chocolate (green packaging) broken into pieces
3 lbs (two 24 oz pkgs.) white almond bark, broken into pieces (some packages of almond bark may have candy coating on the package instead)

Put ingredients into a 4 or 5 quart crockpot in EXACT order as listed. Cover and cook on LOWEST setting for 3 hours. DO NOT remove lid! Turn off and allow to cool slightly. Mixture will not be melted but will be soft. Mix thoroughly and drop by teaspoon size cookie dropper or a teaspoon onto wax paper. Let cool thoroughly. Makes approximately 150 - 170 pieces, depending, of course, on how large you make the pieces.

The lowest setting on my crockpot is "Warm," and that works perfectly for this recipe. Do not put the crockpot on "Low" because it will literally cook the chocolate. You will have a burned chocolate mess. Not speaking from experience or anything...

The recipe makes a TON of candy, so this is perfect to make as teacher gifts. I usually make some to keep at home and make some to take to work.

The only problem is figuring out how to stop eating them!

Here's the original link to the recipe.

Downtown Dining

Our sweet friends Rob & Allison invited us to eat with them one night this week. Since Rodney's leaving me to go to Vegas on Wednesday (boooo!), we had to make plans for early in the week. We don't usually go out to eat like this on a Monday night..just for the record.

I had never heard of this, but Memphis puts on Downtown Dining each year. For $20.12 you can have a three course meal at your choice of several different restaurants downtown. I'm talking nice restaurants where you probably couldn't leave without spending over $60 on a typical night.

I love food and I love a good deal, so this was exciting!

We all decided to go to Blue Fin since we had heard such great things about their food.

Demon possessed?

I was a little worried since the Grizz home opener was downtown last night, but we had no problems at all getting parked and to dinner. The food was delish and we will definitely be going back!

Thanks HeleneEmily ,Kathleen and Co-Host Sarah for hosting!
